Follow Rangemaster’s Christmas Day cooking countdown to avoid catastrophes

Planning is key to making a success of cooking Christmas dinner on a range cooker, as even the most dedicated chef will confirm.

But this year, leading range cooker manufacturer Rangemaster has come to the rescue, with a step-by-step guide to everything which needs to be done on Christmas Day on one of its gas or dual-fuel appliances. The guidelines are based on using a Rangemaster Excel 110 cooker, cooking a 15lb turkey, serving approximately 15 people, eating at 2pm. The turkey should take approximately five hours.

These guidelines are designed to help those who will be in charge of co-ordinating the preparations, cover both Christmas Eve and the day itself, and include the following suggestions:

Christmas Eve

Peel potatoes and vegetables, storing the former in cold water, and the latter in plastic bags.

Prepare the stuffing and sausages, and make the bread sauce as follows; remove crusts from some white bread and cut into large cubes. Take a peeled onion, and dot it with a few cloves and warm in milk to infuse the flavours. Remove the onion, then add the bread to the milk. Cover, allow to cool, then finish on Christmas Day morning.

Christmas Day*

8.30am – Pre-heat the multi-function oven on fan setting to 170ºC and arrange the shelves into the right order for cooking. Remove the turkey from the fridge

9am – Put the turkey into the oven. Finish off the pre-prepared bread sauce by bringing it to the boil while stirring. Cover it and put it on one side

11.30am – Start steaming the Christmas pudding. If red wine is being served with the meal, open it to let it breathe, and, if serving custard with the pudding, get it ready to prepare after the main course

12.30pm – Pre-heat both the Rangemaster’s right-hand fan oven to 190ºC for the potatoes and the slow cook oven

12.45pm – Parboil the potatoes then drain well

1pm – Warm the roasting tin containing the oil or fat ready for the potatoes and/or parsnips, which will need to cook for at least 45 minutes

1.15pm – Put the potatoes and parsnips into the fat, and the roasting tin in the oven. Put the stuffing in with the turkey, but on a separate shelf; get the pans ready for the carrots and Brussels sprouts

1.30pm – Put sausages and bacon into the oven with the potatoes and cook for half an hour, turning half-way through. Remove foil from the turkey if it needs to be browned

2pm – Check the turkey is cooked, if so remove it from the oven and stand on a warmed serving platter, covered by a double layer of foil and a towel to keep it warm. Decant the juices for use in making the gravy. Put serving dishes and dinner plates into the Rangemaster’s slow cook oven to warm. Turn down the heat in the multi-function oven

Make the gravy, cook the sprouts and carrots, and ask someone to carve the turkey

Serve up the vegetables, sausages, sauces and gravy

Check the pudding is simmering gently on the hob, and place a serving dish into the slow oven to warm for serving it in.
